This Basque cheesecake is basically burning the outside of the cheesecake, delivering a “burnt” and bittersweet exterior that complements the creamy, light inside. The cake delivered definitely have the shape of the basque cheesecake but it is a little pale. Perhaps it needs to be a little bit more burnt for a basque cheesecake.

Nonetheless, the cheesecake is creamy and not too heavy. The size of the cheesecake is perfect for sharing with my family. This cheesecake is the brother classic New York–style cheesecake with a press-in cookie crust. The crust of this basque cheesecake is perfect. The only thing I wished for is that extra burnt top layer for that caramelized taste.
